Broccoli Soup

Ingredients:

1/2 Green Pepper (chopped)
1/2 cup Heavy Cream
1/4 cup Onions (chopped)
1 tbs Butter 
1 tsp Curry Powder
1 1/2 cup Broccoli



Trim the broccoli removing the tough portion of the stem.
Separate the buds from the stems. In a large saucepan saute
the chopped green pepper & onion with curry powder in 2 tbs
butter. Cook until onion is just transparent. Save 3-4 small
broccoli buds to use later. Add cut broccoli stems and 3/4 cup
water to cooked pepper & onion mixture. Cover and simmer 5
minutes. Add the buds and cook another 5 minutes longer.
Broccoli should be tender but still green. Put all into a blender
and blend until smooth. Stir in heavy cream and enough water
to thin soup to creamy soup thickness. Add the curry, salt and
pepper to taste. Heat to serving temperature. Garnish each
bowl with 1 tbs of sour cream, and a tiny uncooked broccoli
bud (optional).


3-4 Servings Approx 6 Carbs each
